Gluten Free Pancakes (Oven-Baked)

  • 3 eggs
  • 3/4 cup water or soy/almond/rice or regular milk (See Product List)
  • 1/2 cup plus 2Tbsp almond meal/flour (See Product List)
  • 2 Tbsp arrowroot (See Product List)
  • 1 tsp honey
  • 1/2 tsp cinnamon
  • pinch nutmeg
  • pinch salt
  • 3 Tbsp butter/lard/coconut oil
  • 1 apple
  1. Take a 12″ iron skillet and put it in the oven and preheat to 475
  2. Whisk eggs, whisk milk, then whisk flours, honey, cinnamon, nutmeg and salt until combined
  3. Chop apple into small pieces and add into batter
  4. Remove skillet (carefully-its hot)
  5. Coat skillet with fat source then pour in batter
  6. Bake 10 min or until puffed and golden brown all the way around

 

Note: The original recipe used butter-I use lard and have found 2 Tbsp to be sufficient. I also often bake it a few more minutes than they say, but it may depend on your oven. For the fruit intolerant, leave out the apple and use the correct brand of almond flour.
